If I have three days to do Cordoba and Sevilla, what is best to do from a Jewish point of view? Where is there more to see and do from a Jewish point of view between the two?

I know this subject has come up before but I couldn't find it. I have a question about the tradition of waiting one hour between the consumption of meat and milk products. Is this, as some suggest, a tradition borrowed from the Ashkenazim in Holland or was it a tradition from the Iberian Peninsular? Do we know of any Iberian rabbis who held like this?
